Ingredients

  • 500g fresh okra (chopped)
  • 1kg assorted meat or fish (beef, goat, smoked fish)
  • ½ cup palm oil or vegetable oil
  • 4 medium tomatoes (blended)
  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (grated)
  • 1-2 scotch bonnet peppers (optional)
  • 1 seasoning cube (optional)
  • 1 teaspoon salt (adjust to taste)
  • 1 cup water or stock

Step 1 : Wash and Prepare the Okra Properly

Begin by washing the fresh okra thoroughly under running water to remove dirt and impurities. Trim the ends and chop into small round pieces. Okra releases a natural slimy texture when cut, which is essential for the stew’s consistency. Set aside in a clean bowl. Proper preparation ensures freshness and enhances the texture of the final dish.

Step 2 : Clean and Prepare the Protein

Wash the meat or fish thoroughly and remove unwanted parts. Cut into medium-sized pieces if necessary. Proper cleaning ensures the dish remains hygienic and flavorful. Set aside for seasoning.
