Begin by washing the fresh okra thoroughly under running water to remove dirt and impurities. Trim the ends and chop into small round pieces. Okra releases a natural slimy texture when cut, which is essential for the stew’s consistency. Set aside in a clean bowl. Proper preparation ensures freshness and enhances the texture of the final dish.
Wash the meat or fish thoroughly and remove unwanted parts. Cut into medium-sized pieces if necessary. Proper cleaning ensures the dish remains hygienic and flavorful. Set aside for seasoning.
Place the protein into a pot and season with salt, garlic, ginger, onion, and seasoning cube. Mix thoroughly and allow to marinate for about 15–20 minutes. This step ensures deep flavor infusion.
Place the seasoned protein on medium heat with a small amount of water and cook until tender. This also produces a rich stock for the stew.
Blend tomatoes with pepper, garlic, and ginger until smooth. This mixture forms the base of the stew.
Heat palm oil in a pot and add chopped onions. Sauté until soft and fragrant. This builds a rich flavor base.
Pour the blended mixture into the pot and cook until thickened and oil separates. Stir occasionally.
Add the cooked meat or fish along with stock into the stew. Stir well to combine.
Add the chopped okra and stir gently. The okra will begin to release its natural thickening texture.
Allow the stew to cook for 10–15 minutes until the okra is soft but not overcooked.
Taste the stew and adjust salt and spices as needed.
Allow the stew to simmer briefly so all flavors blend together.
Serve hot with rice, banku, or kenkey and enjoy this authentic Ghanaian dish.
