Chin Chin

Achomo (Ghana) is a popular deep-fried snack (reminiscent to cookies) from West Africa.

The basic ingredients used, are flour, butter, eggs, salt and sugar but there are many variations (i.e. the addition of milk, cinnamon, vanilla and /or baking soda).

The following recipe calls for the basic ingredients but nutmeg is used to enhance the flavor and smell of the pastries.

This recipe serves 1-2 people.

Ingredients

1 cup of All-Purpose Flour

3 tbsps of White Sugar

1/2 tsp of Salt 2 tablespoons of Ground Nutmeg

3 tbsps of Butter (cut into small pieces)

1 Egg

4 cups of vegetable oil (for frying)  

Preparation preparation time: 10-15 minutes Cook time 10-15 minutes

Serves 1-2 people  

Method

In a mixing bowl, combine the flour, sugar, nutmeg and salt. Add the pieces of butter, and with the tips of your fingers, work butter into the flour until the mixture has a consistency of fine breadcrumbs. Make a well with the breadcrumb mixture and crack and add an egg.

Use your hands to combine the egg with the flour mixture until a dough is formed.

On a clean, clear surface roll out the dough with a rolling pin until its about an inch thick.

Cut the dough into squares and separate for frying. Heat the oil until its hot enough to fry and add the squares in small batches Fry up to 6 minutes (until golden brown).

Transfer the cooked squares unto a paper towel to drain out the excess oil and allow to cool.
