Fresh Tomato Salad with Preserved Lemon


  1. 2 large ripe tomatoes in medium dice (preferably peeled, seeded, then diced)
  2. 1 peeled celery stalk; cut in half lengthwise and thinly sliced
  3. 1/4 cup yellow bell pepper in small dice
  4. 1/4 cup chopped cilantro
  5. 1/4 cup chopped Italian parsley
  6. 2 tablespoons minced preserved lemon (peel only)
  7. kosher salt
  8. 3/4 – 1 teaspoon ground cumin
  9. 1 tablespoon finely chopped ginger
  10. 1 tablespoon balsamic vinegar


Toss and season with salt to taste. Ideally make in the morning, bring to room temperature before serving and season again to taste.
